How To Sous Vide Pork Leg Cutlet
Leg Cutlet is rich in fat and connective tissue. As a result, it is advised that you sous vide leg cutlet for longer periods of time and at slightly higher temperatures.
We advise that you do not cook at leg cutlet lower than medium.
Sous Vide Pork Leg Cutlet Recipe/Time
The most simple way of preparing leg cutlet is to:
- Bring your sous vide setup up to the proper temperature (see chart below).
- Cut it into portions.
- Put the leg cutlet into individual bags, along with a cooking fat like butter or olive oil, as well as some salt
- Seal the bag and place it in the water bath for some time.
- Remove the bag from the water bath, and the leg cutlet from the bag
