How To Sous Vide Pork Pork Belly
Pork Belly is rich in fat and connective tissue. As a result, it is advised that you sous vide pork belly for longer periods of time and at slightly higher temperatures.
We advise that you do not cook at pork belly lower than medium.
Sous Vide Pork Pork Belly Recipe/Time
The most simple way of preparing pork belly is to:
- Bring your sous vide setup up to the proper temperature (see chart below).
- Cut it into portions.
- Put the pork belly into individual bags, along with a cooking fat like butter or olive oil, as well as some salt
- Seal the bag and place it in the water bath for some time.
- Remove the bag from the water bath, and the pork belly from the bag
