How To Sous Vide Pork Top Leg Roast
Top Leg Roast is rich in fat and connective tissue. As a result, it is advised that you sous vide top leg roast for longer periods of time and at slightly higher temperatures.
We advise that you do not cook at top leg roast lower than medium.
Sous Vide Pork Top Leg Roast Recipe/Time
The most simple way of preparing top leg roast is to:
- Bring your sous vide setup up to the proper temperature (see chart below).
- Cut it into portions.
- Put the top leg roast into individual bags, along with a cooking fat like butter or olive oil, as well as some salt
- Seal the bag and place it in the water bath for some time.
- Remove the bag from the water bath, and the top leg roast from the bag
